Aunt Boo Boo's Macaroni Pie
Ingredients
1 dozen Eggs [extra large ]
1 lb or 2 cups grated cheese (parmesan or romano)
1 lb flat linguine
2 teaspoons black pepper [We like to taste the pepper, but not too hot]
3-4 teaspoons salt
1 stick of butter
1 pkg. Pillsbury refrigerated pie crusts [ 2 in a pkg.]
1/4 lb. hard or genoa salami-cut into pieces
Break linguine into thirds and cook in boiling water till a little more than half way done and drain well.
Beat the eggs.
Add cheese, salami, salt and pasta to the eggs.
Add pepper to mixture. Add enough so that the pepper can be seen throughout the mixture.
Grease the pan well.
Place mixture in pan. The egg mixture should cover the pasta.
Cut the butter into pats and place on top of the mixture.
Roll out pastry and cut into 6 to 8 strips.
Place 4 strips in one direction on top of the linguine mixture. Weave the other 4 strips going in the opposite direction.
Cook at 325-350 degrees for 1 hour or until done[Knife comes out clean when inserted in the middle].

Crumb Cake
Cake
2 13x9 pans or 1 larger pan (greased and floured)
1 box yellow cake mix (do NOT follow directions on box)
1 1/3 cups milk
2 eggs
Mix cake, milk and eggs
Beat for 4 minutes
Pour into pans and bake at 350 degrees for 15 minutes
Make crumbs while cake is baking
Crumbs
3 cups flour
1 cup sugar
3 sticks margarine or butter (soften to room temp)
3 tablespoons cinnamon
Break up margarine into pieces, crumble all ingredients by hand.
Cover cake with crumbs and bake for additional 15 minutes
Sprinkle with powdered sugar when cool.
Don’t try to use only 1 13x9 pan – the cake will rise too much and there won’t be enough room for the crumbs.

Sausage Bread (makes 2)
Ingredients
2 12 inch circles of Italian Dough
1 pound of sausage (skin off - 6 to 7 links)
1/3 pound of mozzerella cheeze
1/3 pound of swiss cheese
parmesan cheese to taste
fresh pepper to taste
Preheat the oven (325 degrees)
chop and fry the sausage, adding the pepper
mix cooked sausage, and shredded cheeses in a bowl
place mixture carefully on the dough and roll up (jelly roll fashion)
With the dough seam on the bottom, shape the roll into a crescent and seal the ends.
Make 4 or 5 slits on the top and brush top with sausage drippings.
Bake for 30 to 40 minutes at 325 degrees

Garlic Mashed Potatoes with Crunchy Onions
3 Cups water
1 Cup milk
2 teaspoons garlic salt
1/2 cup sour cream
3 cups Hungry Jack Mashed Potato flakes
1 (2.8 oz) can French fried onions, crushed
1/4 Cup grated Parmesan cheese
1) Spray 1-1/2 quart casserole with no-stick spray. Heat water to boil in a medium saucepan. Remove from heat. Add milk, garlic salt, sour cream; stir. Add potato flakes mixing to combine well. Preheat broiler.
2) Spoon potatoes into prepared casserole. Sprinkle with onions and cheese. Broil 4 to 6 inches from heat for 60 seconds or until golden brown.
Makes 8 (1/2 cup) servings

Marabella Chicken
Ingredients:
9 lbs. chicken (3) cut up
1 entire head Garlic
1/4 cu. dried Oregano
Salt and pepper to taste
1/2 cu. Red Wine vinegar
1/2 cu. olive oil
1 cu pitted prunes
1/2 cu. pitted Spanish olives
1/2 cu. capers
6 Bay leaves
1 cu. brown sugar
1 cu. White wine
1/4 cu. finely chopped Parsley
Directions:
Peel and finely puree the garlic. In a large bowl, combine all the ingredients EXCEPT brown sugar, wine and Parsley. Cover and let marinate in the fridge overnight. Preheat oven to 350*F. Arrange chicken in a single layer in shallow baking pans. Spoon marinade over the chicken. Sprinke chicken pieces with brown sugar. Pour White wine AROUND chicken. Bake for 50 minutes to 1 hour, basting frequently with pan juices. Serve with noodles or rice. Can be served hot or cold.

Kentucky Butter Cake
Ingredients
3 cups flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup butter
1/4 cup pecans
2 cups sugar
4 eggs
1 cup buttermilk
2 teaspoons vanilla

Butter Sauce
1 cup sugar
1/4 cup water
1/2 cup butter
3 teaspoons vanilla
|
Preheat the oven (325 degrees)
grease 10 inch tube pan
sift together flour, salt, baking powder, and baking soda
mix together
cream the butter
gradually add sugar
cream well
add the eggs 1 at a time, beating after each addition
combine buttermilk and vanilla
add the sifted flour mix, alternating with buttermilk
begin and end with the flour mix
sprinkle pecans on bottom of pan
pour batter into pan and bake for 60 to 75 minutes (tooth pick dry)
make sauce
put all sauce ingredients in a pan
heat until butter melts
do not boil
prick hot cake with a fork and pour sauce on top
let cool completely before removing from pan

Katie Beller's Fried Rice
Ingredients
4 cups of cold cooked rice (cook the day before if possible; cook in chicken stock rather than plain water for added flavor.)
1 1/2 pounds fresh pork, cut in 1/2 inch cubes
3 eggs
1 medium onion, diced
2-3 carrots, diced in 1/4 inch cubes
1 green pepper, diced
3-4 Tablespoons Kikkoman soy sauce (or to taste) (Use less if an American soy sauce is used.)
1/2 - 1 teaspoon ground pepper
Saute pork and onion in about 3 Tablespoons oil. When brown, push to outside of pan and hard-scramble the eggs. Add carrots, green pepper and rice, seasoning to taste with soy sauce and ground pepper. Stir constantly to prevent sticking and to distribute seasonings evenly. Serve as soon as rice and vegetables are heated through. Serves 4.
Good when reheated. Shrimp, ham, chicken, or beef may be substituted for the pork.

1 lb grated cheese (parmesan or romano)
1 lb flat linguine
black pepper
1 stick of butter
Cook linguine a little more than half way and drain well
Beat the eggs.
Add cheese and pasta to the eggs.
Add pepper to mixture. Add enough so that the pepper so that it can be
seen throughout the mixture.
Grease the pan well.
Place mixture in pan. The egg mixture should cover the pasta.
Cut the butter into pats and place on top of the mixture.
Cook at 325-350 degrees for 1 hour or until done.

Cajun Shrimp And Corn Bisque
(from Cooking Light magazine)
Ingredients
4 cups fat-free milk
2 cups diced peeled baking potato
1 tsp. Cajun seasoning for seafood (such as Chef Paul Prudhomme's seafood magic)
1/4 tsp. salt
1/4 tsp. pepper
2 (14 3/4 oz.)cans no-salt-added cream-style corn
1 pound large shrimp, peeled and deveined
Combine the first five ingredients in a Dutch oven, and bring to a boil.
Reduce heat, and simmer the milk mixture for 10 minutes, stirring occasionally.
Stir in the corn, and bring to a boil.
Add the shrimp, and cook for 2 minutes or until shrimp are done.
Yield: 4 servings (serving size: 2 cups)

Black Bean Veggie Burgers

Ingredients
INGREDIENTS:
| 1/2 onion, diced |
1 can black beans |
| 1/2 cup flour |
2 slices bread, crumbled |
| 1 tsp onion powder |
1 tsp garlic powder |
| 1/2 tsp seasoned salt |
salt and pepper to taste |
| oil for frying |
PREPARATION:
Sautee the onions till soft, about 3-5 minutes.
In a large bowl, mash the beans until almost smooth. Add sauteed onions and the rest of the ingredients, except the oil, adding the flour a few tablespoons at a time to combine well.
Mixture will be thick.
Form bean mixture into patties, approximately ½ inch thick and fry patties in a small amount of oil until slightly firm. Make veggie burgers and enjoy!
